Don't you love refreshing and cold salads in the summer?
This recipe is easy quick and makes the perfect cool light salad to
accompany a grilled dinner of chicken, pork or beef.
Start with the ingredients below~
2 average size green bell peppers
4 average size roma tomatoes
shredded mozzarella cheese about 1/4 cup
salt and pepper to taste
garlic flakes, just judge with your tossing
and fresh or dried parsley also tossing to coat
Dressing is simply~
wine vinegar and olive oil
This salad is not exactly measured.
You can adjust to the size you need
by adding more of less of the ingredients.
Fresh garlic is best but dried spices work
just as well.
Chop peppers and tomatoes
Add the cheese, garlic, salt, pepper
and parsley.
Top with a drizzle of olive oil to entire top of salad.
Follow with wine vinegar using a little less
and toss all to coat.
Look how pretty it looks in my vintage Fire King Bowl.
You can also vary the ingredients by adding,
cucumbers, onions, zucchini, mushrooms or black beans.
A little twist on the traditional lettuce salad and goes so well with outdoor grilling.
Let me know if you try this.
The Italian flavor compliments so many main dishes.
~Enjoy~

This looks so yummy I am almost drooling into the keyboard, if it wasn't so far I would be over to try it! Hugs, Valerie

Looks and sounds delicious. We eat salads and fresh veggies every day in the summer, so we're always on the lookout for a new recipe.
Thanks, and have a beautiful day.

Good Morning, Your salad looks yummy and I can cut it down in size for just one person. That is the hardest part for me cooking for one person. I did get me a cantaloupe and I froze part of it in individual packages. I will see how good of a job I did. Did you take pictures of your drive? My oldest son is working in your state until after the 4th of July. He is in Baytown. Have a wonderful day.Hugs and Prayers from Your Missouri Friend.
It looks and sounds wonderful! Perfect for my new Mediterranean lifestyle I am embarking on.
Your salad looks so yummy, Celestina! It just so happens to be the colors of the Italian flag:) I love making salads in the summer time, too, thanks for sharing!!

Thank you for a delicious summertime recipe. We will love this.
Mmmmm - so healthy, so easy and so delicious! Sometimes we get too fancy with things when a simple combination is awesome. This is a great combo Celeste. We have summer farm markets right now in Ohio and it's so nice to buy super fresh veggies!
Hope you have survived the worst of the Texas weather we've seen on the news recently. Take care and don't drive through any standing water!!
Love & hugs, Edie
It looks so good (and so pretty). Of course, you have such pretty oil and vinegar bottles (which I'm sure you created). laurie
